The premiere of the all-new AER took place at Mumbai's Four Seasons Hotel and it was awesome to say the least!!
The revamped décor and innovative cocktail selection reinforce the venue's standing as one of the greatest rooftop bars in the world.
One of the best features of the AER is undoubtedly the retractable roof, which can be opened and closed through remote control (much like the roof at Wimbledon). Imagine being able to look out over all of the famous SOBO landmarks with the lovely sky serving as your roof, even while it's raining outside!!
The AER roof is the first of its type in India and your time at AER is going to be a record-setting one too.
For years, aficionados of the high life have made their way to the Four Seasons Hotel Mumbai and the AER bar, located on the top floor, is the crowning glory of this massive tower. It is widely considered to be among the best bars in the world owing to its great cocktails, perfect service, chic ambiance, and breathtaking views.
The great news is that The AER will return this weekend after undergoing a year of major modifications!!
A gastronomic voyage & culinary artistry
The new menu at AER is a gourmet adventure fit for gourmands and an exhibition of culinary mastery.
Beverage Manager Alexandre Renoue, better known as Alex, has created a menu of innovative drinks that is sure to please even the pickiest of drinkers, and the bar's sophisticated interiors are perfect for long, leisurely looks out over the skyline of South Mumbai and the city's breathtaking sunsets.
The new menu at AER is a culinary adventure for connoisseurs and an education in the art of fine dining. Alex explains that the bar's drink list was designed to be "a sensory voyage through the changing patterns of weather" in honour of the establishment's maritime theme. While the Clear Skies cocktails are light and airy, the Thunderheads are dark and foreboding, a collection of strong spirits and alcohol-forward mixes.
The playful frothiness of Cumulus, with its frothy concoctions, or the monsoon reverie with its refreshing carbonated drinks, or the well-balanced non-alcoholic cocktails that are available to make sure that every visitor appreciates the expert workmanship, are available to guests on sunny days.
The broad menu at AER includes speciality cocktails made from scratch, tasty small and big dishes inspired by cuisines from across the world, and a wide variety of alcoholic beverages from around the globe.
The delicious dishes on the menu are reminiscent of those found around the beaches, and they are guaranteed to please even the most picky eater. Vegetarians and vegans may choose from a wide variety of options.
The barman and hostess are the friendly faces that greet customers as they enter, and the seating areas arranged around the bar are accessible from any of the four sides. This is an example of how the people-centric design prioritises the service touch points.

The Design
Phillip Pond, principal of Atelier Pond in New York and Bangkok, whose work can be seen in a number of five-star hotels across the world, is responsible for the revitalization of one of the city's most recognisable landmarks. Under his leadership, the new AER's distinctive latticework facade has become an unparalleled landmark in the city.
Art Deco's traditional vocabulary speaks a modern language of design, from the rhythm of the latticework to the arches that punctuate it to the smooth stone cladding that curves sinuously down the surfaces.
Although the area has a strong maritime vibe, not every fixture is a copy of a ship. Instead, the lounge encourages guests to adopt a more modern perspective on the classic yacht club, transporting them far from the humdrum of city life to enjoy refreshing sundowners and AER's other finer comforts.
When asked about the new restaurant, general manager Sunil Narang said,
"Everyone who visits us asks about AER; it is the most anticipated opening for Four Seasons Hotel Mumbai guests. The hotel is set apart by its commitment to offering guests with unique and customised experiences, and with the help of AER, we want to leave our mark on the history of the cocktail capital, also known as our home."
AER's new hours are Sunday through Saturday, 8:30 p.m. to 1:30 a.m., beginning June 18th.
