The meticulously curated menu of Chef Jude Fernando features dishes from his homeland that reflect the distinctive combination of influences and seasonings found in Sri Lankan cuisine. Chef Jude, a culinary virtuoso, has previously served as the esteemed Executive Chef of Four Seasons Resorts Maldives and Four Seasons Hotel Mumbai, where he wowed discerning patrons.
Now, with his extensive knowledge and passion for Sri Lankan flavours and cuisine, Chef Jude displays his culinary expertise at the Four Seasons Hotel Mumbai in the form of a menu that exhibits the authentic flavours and fragrances of Sri Lanka.
Chef Jude hand-selected the ingredients from the markets of Colombo and carried them to Mumbai. Guests are invited to indulge in an exquisite selection of tantalising appetisers, such as the traditional green banana 'Alukesel Patties' and the delectable 'Maalu ambul tiyal', a traditional fish curry. From the fiery flavours of traditional curries to the comforting fragrances of coconut-infused rice, each dish is meticulously crafted to reflect the authentic flavours of Sri Lanka. Taste the delectable "Bittara Appa," a traditional crepe served with a variety of fillings, and savour a variety of coconut-based deserts as the delicious conclusion to a delightful culinary voyage.
