In honor of the 75th Republic Day of India, Executive Chef Shivaramakrishna.J of Novotel Vijayawada Varun introduces a special and delectable treat - the Tricolor Kaju Pista Burfi.
This dish is a celebration of India's rich cultural heritage, meticulously crafted to represent the vibrant colors of the national flag. Chef Shivaramakrishna.J's creation is not just a feast for the palate but also a visual spectacle that showcases his culinary expertise and creativity.
Tricolor Kaju Pista Burfi: Recipe for a Gastronomic Delight
Ingredients -
- Cashewnut Powder – 60g
- Pistachio Powder - 60g
- Sweetened Condensed Milk - 300g
- Cardamom Powder - 1/2 tspGhee - 1 tbsp
- Green Food Colour - 5-6 drops
- Chopped Almonds & Pistachios for garnish
Preparation Method:
- Roasting and Grinding Pistachios:
Dry roast the pistachios for 3-4 minutes on low heat, then let them cool. Grind them lightly to a coarse consistency.
- Mixing the Ingredients:
In a separate bowl, combine half a cup each of cashewnut and pistachio powder, along with cardamom powder, and set aside.
- Cooking the Mixture:
Heat ghee in a pan, add sweetened condensed milk and the powder mix. Stir well and cook on medium heat until the mixture starts to separate from the sides of the pan. Then, remove from heat.
- Setting the Burfi:
Spread the mixture evenly onto a greased plate, aiming for a thickness of about 3/4 to 1 inch. Sprinkle the top with chopped nuts, pressing them gently into the mixture.
- Cooling and Cutting:
Allow the mixture to cool, then cut it into cubes or desired shapes for serving.
